I hate to admit it, but the unseasonably cool August weather in New England has put me in a fall state of mind. The recent stretch of cool and crisp nights are reminiscent of late September / early October climate, which are perfect for sleeping. Lately, I have enjoyed drifting into a deep state of slumber under warm layers of blankets as the open windows fill the bedroom with a nighttime chill.

And have you noticed that the daylight hours have gotten shorter? I realized the sad reality when I looked out my kitchen window at 8pm last week and noticed that it was already dark! What's that all about?! Only weeks ago, there was daylight at 9pm as I went for my evening walks. Can't take advantage of that anymore. Today, I just want to get into my comfy jammies after dinner because it looks like bedtime.

Naturally, all sorts of fall-like things have been running through my mind: hot apple cider, autumnal colored leaves, the smell of wood burning, pumpkin pies, warm checkered jackets, fuzzy knitted mittens, and comfort food.

Well, today's recipe is definitely a comfort food. Boy is it yummy! Consider it my twist on the classic Southern hamburger gravy and biscuit dish. Let me tell you, this bread bowl is hearty, stick to your ribs, and will leave you satisfied and nourished.

If you like budget-friendly and easy to make meals, this soup in a bread bowl fits the bill. It can easily be made in 30 minutes. No lie! Making it is as simple as browning the ground beef along with shallot, garlic and seasoning. Next comes the white gravy, which is made by whisking butter, flour, milk, seasoning, and cream in succession over medium heat. Combine the beef and the gravy, then pour into a hollowed mini boule. Then there is nothing left to do but to enjoy!

I love everything about this soup from the savory ground beef to the smooth and creamy gravy that warms cockles of my heart. Once I have eaten through the cream hamburger soup, there is more goodness waiting for me by way gravy soaked bread! YUM!!

Creamed Hamburger Bread Bowl

INGREDIENTS:
1 1/2 tsp. oil
1 lb. ground beef
1 shallot, minced (about 1/4 cup)
1 clove  garlic, minced
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. salt
1/4 tsp. black pepper
2 tbsp. Worcestershire sauce

For the white gravy:
4 tbsp. butter
4 tbsp. all purpose flour
3 cups whole milk
3/4 tsp. salt
1/4 tsp. black pepper
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/4 cup heavy cream (optional)
4 mini bread boules

INSTRUCITONS:

Preheat a 10 or 11-inch skillet on medium high. Add ground beef, shallot, and garlic. Brown beef, using a spatula to break up into crumbles. Add garlic powder, onion powder, salt, pepper, and Worcestershire sauce. Continue cooking a stirring until the beef is cooked through. Transfer the content into a bowl.

Reduce heat to medium. Using the same skillet, add butter. Melt. Add flour, whisking continuously for 2 minutes. Gradually whisk in milk. Add salt, pepper, onion powder, and garlic powder. Allow milk to come to a simmer, whisking constantly until milk thickens.

Add cream. Stir in ground beef mixture. Allow to come back to a simmer and adjust seasoning to taste. Remove from heat.

To serve: cut off the top 1/3 of the boule. Using your hands, hollow out the center of the boules leaving 3/4-inch wall. Fill with beef and gravy.

Makes 4 servings.

Note:
  • Add a splash of milk if the gravy is too thick.
  • To prevent curdling or boiling over, do not allow milk to come to a rolling boil.

    1. Lucky you! I've never been to San Francisco or Disneyland (I've been to Disney World). I'd love to spend to some in California one of these days. Clam chowder bread bowl is the bomb! But switching it up with other things is so much fun too!
