Brussels Sprouts with Apple Walnut and Bacon

Brussels sprouts, bacon, apple, and walnut makes this side dish perfect for the holidays or any time of the year!

It’s been interesting here in the Northeast. Within the past month we have had earthquake, hurricane, and snow. Fortunately in my area, we made it out unscathed, but it’s going to be a long cold winter. That’s unfortunate for me because I will be spending every day of the next six months under four layers of clothes.  Indoors! No kidding! I’m so reptilian.

One of the things that will warm my winter up is this dish. Brussels sprouts are one of those under-appreciated vegetables that just the mere name makes some people grimace in discuss. I’m not one of them. Yes, admittedly, they are in the category of vegetables that releases a, let’s just say a distinctive aroma when cooked, but they taste so much better than they smell. When sautéed and combined with bacon, apples, walnuts, apple cider vinegar, and brown sugar, how could they not taste good?

Biting into this dish is like biting into a kaleidoscope of flavors and texture. There is the tenderness of the brussels sprouts, the crispy/chewy of the bacon, the crunch of the walnuts, and the tender crisp of the apple. There is also a balance of sweetness from the brown sugar, salty from the bacon, and tangy from the cider vinegar. The unassuming, boring Brussels sprouts are transformed into something so much more exciting.


To make it, we start with the bacon.  Yum!

 Next, remove bacon and sauté the brussels sprouts until slightly firm.

…and apples.

Return the bacon and add the cider vinegar and brown sugar dressing.

BRUSSELS SPROUTS WITH APPLE WALNUT AND BACON

ADAPTED FROM PINCH MY SALT


INGREDIENTS:
1 lb. brussels sprouts
4 slices bacon, sliced1/2 inch pieces
1 medium apple (Granny Smith, Golden Delicious, Gala ect.)
1/2 cup chopped walnuts
2 tbsp. apple cider vinegar
1 tbsp. packed brown sugar
1/4 tsp. salt
1/8 tsp. pepper

INSTRUCTIONS:

Wash brussels sprouts. Trim ends and remove any yellow outer leaves. Slice into 1/4 in slices. Cut apples into small chunks. In a small bowl, combine apple cider vinegar and brown sugar. Set all aside.

In a large skillet on medium high heat, brown bacon until crispy. Remove bacon and place on paper towels.  Pour out fat, reserving two tablespoons in pan. Add brussels sprouts, salt and pepper, stirring frequently until sprouts are just slightly firm, about 8-10 minutes. Add a splash of water if sprouts begin to brown and sticks to skillet.

Stir in nuts and apples. Cook for a few minutes until apples are just slightly firm, not mushy. Return the bacon. Add the vinegar and sugar mixture.Remove from heat. Serve. As with any recipe, adjust the seasoning to obtain the sweetness, saltiness or tanginess you desire.
