Ice cream Sandwich Skinnies are made with reduced fat chocolate cookies that are sweetened with agave nectar and applesauce. Fill with regular, reduced fat, no sugar added, or yogurt ice cream.
I decided to start this post with
a little trivia game. Please humor me
and join in. I am going to quote a few of my favorite lines from one of my favorite sitcoms. Can
you guess what popular long running 1990s TV show it came from? Hint: the setting was in New York City.
"Over the line? You...you...you're so far past the line that you can't even see the line! The line is a DOT to you!"

Let’s move onto to the real star
of the show, the ice cream sandwiches. For starters let me tell you about what is not in the cookie part of the
sandwich—no refined sugar, no eggs, no butter. Yet, it’s moist, sweet, and so good that it can be eaten on its
own—sans ice cream.
For the ice cream part of the
sandwich, use what you like; reduced sugar, sugar free, reduced fat, fat
free. Or, go frozen yogurt. Or, go sherbet …whatever makes you
happy!
That leads me to my next point. The store bought ice cream sandwiches are
good, but the flavor options are limited. What if you’re in a mood for chocolate chip peppermint crunch, or peanut
butter pie, or rainbow sherbet, or strawberry ice cream center with mini
chocolate chip trim, or half coconut half black raspberry ice cream with a
coconut trim? When you make your own,
you get what you want. You are only
limited by your imagination…or by the family raiding your ice cream supply before
you had the chance to make the sandwiches!
Update:
If you guessed Friends, you’re correct! The quote was from episode 4.07 called “The One Where Chandler Crosses The Line”, which aired in 1997. The remarks were made by Joey during a heated exchange with Chandler where the latter confessed to kissing Joey’s girlfriend.
ICE CREAM SANDWICH SKINNIES
INGREDIENTS:
1 cup flour
1/3 cup unsweetened cocoa
1/2 tsp. baking powder
1/4 tsp. baking soda
1/8 tsp. salt
1/3 cup agave nectar
1/2 cup applesauce
1/4 cup oil
1 tsp. vanilla extract
your choice of ice cream for filling
candied sprinkles, coconut, chocolate chip, etc. to decorate the edges (optional)
INSTRUCTIONS:
Preheat oven to 350 degrees F.
Blended wet ingredients using a wooden spoon. Add dry and blend until ingredients are well incorporated. Place on greased cookie sheet using a small ice cream scoop or a spoon. Flatten cookies to about 1/4 inch thick by using a greased palm. Baked for 7 minutes. Allow to cool.
Allow ice cream to sit at room temp for a few minutes to slightly soften. Place a scoop of ice cream on one cookie. Sandwich with a second cookie. Roll edges in decorative coating, optional. Repeat until all of the cookies are gone. Freeze for at least 1 hour. Makes about 7 ice cream sandwiches.
