These chicken salad sandwiches have a mild flavor of garlic, herbs, and cheese.
We had our new next door
neighbors over for dinner for the first time last weekend. For over five hours we sat, talked, ate, and
drank. The conversation flowed smoothly. Naturally, one topic discussed was unpacking. We all agreed that it was the 1,734 favorite
thing we like to do. Food of course,
was the focal point of the night. Since I
planned a prime rib dinner feast, I decided to go simple and easy with the
appetizer and served crackers with store bought garlic and herbs spreadable cheese. A good time was had by all.
The following morning with food
still on my mind, I decided to incorporate the smooth, creamy cheese into a
dish. Chicken salad seemed like a
perfect application for it. After I
whipped up the sandwiches, had a photo shoot, I immediately served my creation for the day’s
lunch. I'm happy to say the it was approved by husbands and kid...I mean kids and husband! Love it when I kill two birds
with one stone!
CHICKEN SALAD SANDWICH WITH GARLIC AND HERBS CHEESE
INGREDIENTS:
3 cups chopped cooked chicken
3/4 cup garlic herb spreadable cheese (I use Boursin or Alouette)
1/4 cup plain Greek yogurt
1/3 cup thinly chopped celery
1/2 tsp. salt
1/4 tsp. pepper
6 slices tomatoes
6 lettuce leaves
6 small bulky rolls or buns
INSTRUCTIONS:
Combine the first six ingredients. Mix to blend. Assemble sandwiches using about 1/2 cup chicken salad, 1 tomato slice, and one lettuce leaf per bun. Makes 6 small or 4 regular size sandwiches.
