Are you like me? Sometimes I want to make a treat but don't want a boatload left over to tempt me for days on end. And sometimes I don't want to bother with giving them away. That's when small batch baking comes in handy. Yes, excess baked goods can be frozen to enjoy at a later time, but fresh is always best. When they are as easy to make as these muffins, I don't mind whipping up a batch as needed.

Hi y'all! It's Thanksgiving week, so I would like to wish everyone a wonderful holiday! Enjoy your day whether it be in a houseful of people or quietly chilling at home doing whatever you want.

Rather than inundating you with another holiday themed recipe on the blogosphere this week, I opted to share shakshuka with you. Shakshuka originated in North Africa and gained popularity in the Middle East. It can be eaten for breakfast, lunch or dinner.

What is your favorite way to have butternut squash? My go-to is mashed with cinnamon, butter, and a touch of sugar. It might be a little boring to you, but it always hits the spot for me!

This latest creation is anything but boring. Tender chunks of butternut give a touch of sweetness that balances the saltiness of the Italian sausage. Silky spinach adds nutrition and a pop of color while toasted pumpkin seeds provide a snappy crunch. Finally, cracker crumb topping adds texture, butteriness, and nuttiness. Doesn't that sound like the making of a great dish?

Guys, you are not going to be believe this, but I just heard the first Christmas song of the year on the radio!! WHAAAAT?! Already? Do they not know that it's only November16th

As I drove off to pick up my morning decaf Cup of Joe, to what does my stunned ears should hear, but Andy Williams singing "It's the Most Wonderful Time of the Year". There is a local radio station that plays Christmas music 24/7 around the holidays, but don't recall it EVER starting so early. Needless to say, I changed the station. It is just too soon. Too soon!

This is one of my favorite salsa recipes. I have made many batches over the years. No matter the season or the occasion, it is always a hit. People are consistently surprised at how much they enjoy this fruity concoction.

At first glance, this salsa looks unassuming—just a bowl of finely chopped apples with some color speckled throughout. But when you scoop it onto cinnamon pita chips and pop it into your mouth, it becomes a refreshing flavor blast. It's apple-ie, fruity, sweet, tart, cinnamon-y, light, refreshing, and crunchy. Once you start, it is hard to stop.

Microwave potato chips have been around a few years. I finally made my first batch last week, and I'm glad I did! It was a success. As a cook who likes to experiment, there are simply too many recipes to try and not enough time to do it. Well, I can cross cooking potato chips in the microwave off my list. Yay!

My husband and I celebrated it at home with a couple of good friends, good food, refreshing libations, and movies. We stayed warm, dry, and well fed...fun was had by all.

FRIED HOT STUFFED CHERRY PEPPERS

Do you like hot stuffed cherry peppers? I am a fan. They are pickled and stuffed with provolone cheese and prosciutto. These vessels of deliciousness deliver salty and vinegary flavors as well as heat to your mouth. They are so good! For the longest time, I have wanted to batter and fry them. I finally tried it out this week, and let me tell you, they were as good as I had hope! The texture is wonderful. There is the crispness of the peppers, the smoothness of the cheese, the slight chew of the prosciutto, and the crunch of panko crumbs. This appetizer is a mouthful of flavor and texture that will leave you wanting more.
